The average Cooking classes: how they work and why they cheat on you

One of the top trends of the moment are the cooking class, cuisine lessons for tourists on holiday, of course Italy is a paradise for this business: tourism and food are two milestones for my country.

Combining this two things is wonderful, it creates an unforgettable experience for those who come to visit the wonders of our cities, having the opportunity to cook and eat an authentic Italian meal.

The idea of teaching some recipes of our infinite culinary wealth is excellent, making people cook, getting dirty, kneading and doing something they would never have done before is truly wonderful.

Unfortunately there is a huge problem behind this wonderful idea:

The cooking classes that make fun of the final customer and the tour operator who offers them, putting their face and reputation.

If you want to know why you are getting cheated, read on … otherwise I advise you not to waste time …

How does most of these classes work?

  • go to someone’s home: chef’s apartment, airbnb host, private citizens etc …
  • you put yourself around a table, in front of the flour and eggs and knead the dough
  • after kneading, if the class consists of 10 participants, 2 people chop onions, 2 cut tomatoes, 2 do something else and 4 watch because they have nothing to do
  • the sauce is ready in a big pan, let’s cook the pasta of all the participants in a single pot of boiling water
  • eat pasta that you do not know if it is made by you or someone else dressed with a sauce that you do not know who it is.
  • come out of the cooking class saying “wow I had lot of fun”

if you think there’s nothing strange, stop here … or think about some aspects …


If you have cuts or other injuries who pays for the damage? Everyone knows that the kitchen is the most dangerous room in the house and you need to have insurance … if we choose to sleep in a more or less expensive hotel but still a professional arrangement, why should we choose the amateurs for a moment that may be unique?

If you do not cook yourself how can you say you had a cooking class?

If the recipes are not made individually, how can we say that we did cook?

Everybody makes fresh pasta because it is very simple to arrange, just a table and nothing else… if you eat what you didn’t made yourself, how can you say “I did learn or I enjoied 100% this experience”?

I think that if I get a course to learn how to make fresh pasta and its sauces, I must have the opportunity to make pasta and sauces from scratch, individually and get in the dish what I made with my hands, not someone else’s hands because there is only one pot.

It’s the same situation as 90% of the cooking classes out there… maybe people put their hands in the pasta dough but not everybody does the same job.

Having different jobs in the same lesson is absurd, it’s a scam.

If everyone pays the same price, why does someone take care of one recipe and someone else’s of another?

If in the course program I read a recipe I’m interested in and they get me in charge of another? How should I feel? I pay for a certain recipe but I do not that one?

But the fault is not who anyone, the problem is that there are no references … people, rightly, can not do 5 cooking lessons in a week of vacation, this is absolutely understandable … and missing the possibility of comparison is worth only the concept “I had a lot of fun”
